Super Delish Pecan Pie Cookies

I am LOVIN’ holiday baking this year! This one is one of my new favorites: Pecan Pie Cookies. Which is ironic. because I thought I didn’t like pecan pie. Turns out, I do! Thanks to these yummy cookies.

And I have to say… these were really easy to make. I used Pillsbury refrigerated pie crust, but can use homemade crust if you prefer. When you are cooking the ingredients for the filling, be sure to stir constantly on low heat. One other note is to make sure you line your baking pans with parchment paper. Otherwise you might have a sticky situation on your hands!

Pecan Pie Cookies

Here’s how to make these delectable treats…

Ingredients
  1. 2 prepared Pillsbury pie crusts
  2. 4 tablespoons butter, melted
  3. 1 cup pecans, chopped
  4. 2/3 cup packed brown sugar
  5. 1/2 cup corn syrup
  6. 1 tbs maple syrup
  7. 4 eggs
  8. 1/4 teaspoon salt
  9. Optional
  10. caramel sauce or Cool Whip
Instructions
  1. Preheat oven to 400 degrees.
  2. In a large non-stick pan, combine butter, pecans, brown sugar, corn syrup, maple syrup, salt and eggs.
  3. Cook on the stove top over medium-low heat just until slightly thickened
  4. Remove from heat and set aside
  5. Unroll dough and using a 3" cookie cutter, cut out circles. (I didn't have one of these, so I used a glass that was the same size)
  6. Gently fold about ⅛-1/4" up on the edges
  7. Spoon one tablespoon of the pecan mixture into each circle
  8. Place on parchment lined pans
  9. Bake 8-10 minutes
  10. Remove from oven and cool on a wire rack
  11. If desired, drizzle with caramel sauce OR top with Cool Whip right before serving
Notes
  1. Store in airtight container for several days. No need to refrigerate.
