Sugared Cranberries

I can’t believe I’d never tasted sugared cranberries until yesterday. Why didn’t I know about these sweet, tart, sparkly, little nuggets of goodness? Why doesn’t everybody know about them? My mission today is to spread the word so these little berries get the recognition they deserve!

Ingredients

4 cups sugar
2 cups water
2 cups fresh cranberries

Directions

In a medium saucepan, bring two cups of water to a boil. Stir in two cups of the sugar and stir until sugar dissolves. The finished product is simple syrup. Let the simple syrup cool for a few minutes. Place the cranberries in a bowl and pour the syrup over them. Let the cranberries sit for 4-6 hours or even overnight. Stir them occasionally. Pour the remaining two cups of sugar into a bowl. Drain the cranberries from the simple syrup.

sugared cranberriesAdd the cranberries, in batches, to the sugar. Toss them with the sugar until the are coated all the way around.

Place the sugared cranberries on a parchment lined tray and let them dry for about two hours.

And they are so GOOD!

I served them last night at a party, and they were perfect on top of a Triscuit with a slice of brie cheese. Or you can just eat them by the handful. Which several of my guests did! They also made a beautiful drink garnish a Pomegranate Fizz or any holiday beverage.

  13. Can you make these two days ahead, or do they need to be served within a few hours? I could imagine the sugar would melt quickly at room temperature.
