White Minty Sangria with Serrano Peppers

INGREDIENTS

2 bottles chilled white wine (Viognier or Pinot Grigio)
1 Granny Smith Apple, diced
2 Peaches, peeled and diced
1 Small carton of raspberries
1 Serrano pepper diced finely (use 1/2 for less spice)
1 TBS agave nectar
1 lime (juice only)
1 12 oz. can club soda (more or less to taste)
2 TBS mint (unless you LOVE mint… then add more!)

DIRECTIONS

Mix your fruit, serranos and agave nectar. Let sit for 1/2 hour. Next add wine, club soda, lime juice and mint. Let it all mingle together for a couple of hours. Serve chilled with a sprig of fresh mint to garnish.

 

Skinny Cucumber Margaritas

INGREDIENTS

1 Bottle of pre-made Skinny Margarita mix
3 Cucumbers
2 Limes

DIRECTIONS

Juice two peeled cucumbers. I don’t have a juicer, so I use my NutraBullet. I throw them in (minus the seeds). The juice is a bit thick, so I drain through a coffee filter.   Combine margarita mix, cucumber juice and lime juice. Add sliced cucumbers to container or pitcher. Serve chilled.
