Pesto Zucchini Pasta with Chicken, Tomatoes, Mushrooms & Olives

Oh, zoodles, how I love you!  Yes. Really, I do.  Lately I’ve been a bit lazy about pulling out my spiralizer. However, yesterday reminded me of just how much time it takes. Which is barely any! Honestly, the time it takes you wash the zucchini, get out the spiralizer, and spiralize your perfect zucchini noodles is less than five minutes!  No longer will I be lazy because I like zoodles as much as I do pasta. We Survived the Paleo Challenge!

Saturday marked the end of our six-week Paleo Challenge at Desert Crossfit. During this challenge, we have followed as closely as possible to the Paleo Diet, which consists of eating meat, vegetables, fruit, and nuts. We are eating REAL FOOD!  Tom especially misses bread, so I decided to make him some paleo bacon jalapeño bread. He really liked {Read More}

Homemade Natural Sweetener

 So this is day three of our paleo challenge. So far so good! We’ve been filling out our points form nightly, and we’ve both done well. We’ve been eating real food and avoiding all the no-no’s, except for one. We haven’t found a substitute for Vanilla CoffeeMate. But we have a plan! For the cream, we are going to use coconut milk. Unfortunately, the only place I know of that carries coconut milk without carageenan or preservatives is Trader Joe’s, and they {Read More}

We’ve Gone Paleo!

  Today marks day one of the Paleo Transformational Challenge at our box, Desert CrossFit. And Tom is doing it with me! I never thought I’d see the day. But honestly, if I’m going to succeed in this, he really has to be on board. Otherwise, I will come home several times a week to things I would never buy on my own. Like Oreos, Coke, Triscuits, brie cheese… the list goes on and on. Today while he was at {Read More}
