Jalapeno Cilantro Cole Slaw Recipe... so YUM!

I’m all about tasty, healthy salads all summer long. I love combining flavors and textures. I don’t know about you, but I usually prefer old favorites with some twist to them like this one. Keeps things more interesting! Plus it’s easier to create meals that are good for you. BTW, if you want to watch me make this, check out this Periscope replay on Katch.me!

This Jalapeño Cilantro Cole Slaw recipe is a twist on the old favorite — light and refreshing (no mayo) with a bit of a kick. If you don’t like the heat, simply leave out that jalapeño pepper!

Jalapeno Cilantro Cole Slaw Recipe... so YUM!The ingredient list is an awesome combination of healthy goodness: cabbage, red bell pepper, green onion, cilantro, jalapeño, pepitas, olive oil, lime juice and cumin. YUM! I like chopped salads the best, so I chop up all the veggies. It’s the perfect side for a casual meal on a hot summer night!

Ingredients
  1. 4 cups thinly sliced green cabbage (from about 1/2 large head)
  2. 1 red bell pepper, chopped
  3. 1/3 cup green onion, chopped
  4. 1/2 cup chopped fresh cilantro
  5. 1 small jalapeño pepper, seeded, minced
  6. 3 heaping teaspoons pepitas (pumpkin seeds)
  7. 4 1/2 tablespoons olive oil
  8. 3 tablespoons fresh lime juice
  9. 2 1/2 teaspoons ground cumin
Instructions
  1. Combine cabbage, bell pepper, green onion, cilantro, jalapeño and pepitas in large bowl.
  2. Toss to blend.
  3. Whisk oil, lime juice, and cumin in small bowl to blend.
  4. Pour dressing over cabbage mixture.
  5. Season to taste with salt and pepper.
  6. Toss and serve.
Notes
  1. Can be made 2 hours ahead. Cover and refrigerate. Toss before serving.
