Summer Market Salad

Last weekend Tom and I headed to Newport Beach to relax and escape the heat of Palm Desert. It was there that I found one of my new, favorite restaurants, True Food Kitchen! My dear husband wanted to eat somewhere near the beach, but I had been daydreaming about this place that promised fresh, nutritious food that “my palate would remember.

mydrinkWhen we arrived we immediately loved the decor, starting with the vegetable gardens in tubs out front.

We sat outside in a comfortable booth that backed up to a huge wall of greenery!

Tom ordered huevos rancheros (very yummy), and I got the summer market salad. It was a beautiful and delicious combination of purslane (I had to ask what that was; it’s a nutritious leafy veggie that is technically a weed), corn, almond, cucumber, avocado, goat cheese, blueberries, tomatoes and an herb vinaigrette.

Summer Market SaladI liked it so much that I decided to put my own twist on it the next night. Of course, I had to put my own twist on it since purslane can’t be found in local grocery stores.

baby lettuce
cucumber
blueberries
avocado
feta cheese
sliced almonds
Trader Joe’s Frozen Roasted Corn
Ken’s Olive Oil Vinaigrette
