Easy Cheesy Game Day Enchiladas

On game day, I like to serve something more hearty along with appetizers and drinks. These game day enchiladas fit the bill. And the best part? You can make them ahead of time and freeze them until the big day. That makes game day simpler, and I’m all for that!

Easy Cheesy Game Day Enchiladas!

Every now and then, don’t you love a recipe that only has four ingredients (plus water) and involves no chopping?

This recipe is for one large casserole dish or two smaller aluminum pans. Just a few steps are involved. First, stir the chili, enchilada sauce, and water together. Warm up the tortillas in damp paper towels to soften them. Spread a layer of the sauce in the bottom of your pan(s).

Fill the tortillas with cheese, roll up, and place seam-side down in pans. Spoon the remainder of the sauce onto the rolled tortillas.

Sprinkle each pan with one cup of cheese.

Now you can do one of two things. You can bake in a 350° oven for about 40 minutes, until cheese is bubbly. Or, you can do what I did: wrap pans tightly in foil and freeze. Then you’ll have game day enchiladas with no fuss on the day of!

For one large or two small pans of enchiladas
  1. 1 15 ounce can enchilada sauce
  2. 1 15 ounce can no beans chili
  3. 18-20 corn tortillas
  4. 4 cups shredded Mexican cheese blend
  5. 1/2 cup water
Instructions
  1. Preheat oven to 350°. In batches of three, wrap tortillas in damp paper towel and microwave for 15-20 seconds to soften. In a medium bowl, stir together enchilada sauce, chili and water. Spoon a layer of the mixture on bottom of casserole dish or pans. Fill each tortilla with cheese, roll up and place seam-side down in pan. Repeat with all tortillas, lining them up. Spoon remainder of sauce over the tortillas. Sprinkle each pan with one cup of cheese. Bake until cheese is bubbly. Or, wrap pans tightly with foil and freeze for later. Optional: serve topped with sour cream and avocado.
