Ingredients
  1. FOR COOKIES
  2. 1 cup unsalted butter, softened
  3. 1 cup granulated white sugar
  4. 1 teaspoon vanilla extract
  5. 1/2 teaspoon almond extract
  6. 1 egg
  7. 2 teaspoons baking powder
  8. 3 cups all purpose flour
  9. FOR ROYAL ICING
  10. 4 cups (about 1 lb.) confectioners' sugar
  11. 6 tablespoons warm water
  12. 3 TB meringue powder
  13. Icing bottles
Instructions
  1. FOR COOKIES
  2. Preheat oven to 350° F
  3. In the bowl of your mixer, cream butter and sugar until smooth
  4. Beat in extracts and egg
  5. In a separate bowl, combine baking powder with flour and add dry mixture a little at a time to the wet ingredients. (Dough will be very stiff. If it becomes too stiff for your mixer, turn out the dough onto a countertop surface. Wet your hands and then finish kneading your dough by hand.)
  6. Lightly spray donut pan with cooking spray.
  7. Fill each donut in pan 1/2 full, as the cookies will rise.
  8. Gently pat down the dough with fingertips.
  9. Bake for 8-10 minutes or until cookies start to turn golden. (Once you remove the cookies from the oven, they will continue to bake a bit)
  10. Cool on the cookie sheet until firm enough to transfer to a cooling rack.
  11. While cookies are cooling, make the royal icing and set out set out your sprinkles to get ready for the best part...decorating them!
  12. FOR ROYAL ICING
  13. Beat all ingredients until icing forms peaks (7-10 minutes at low speed with a heavy-duty mixer, 10-12 minutes at high speed with a hand-held mixer).
  14. Separate frosting in bowls to mix in different colors with food coloring.
Notes
  1. For stiffer royal icing, add powdered sugar one tablespoon at a time.
  2. For the thinner icing, add more water, an additional teaspoon at a time, until you reach desired consistency.
  3. When decorating the donut cookies, use a plastic bag or piping bag to drizzle icing.
  4. Royal icing will keep at least a month.
  5. Cover with plastic wrap and refrigerate.
