MIGAS! The best brunch ever!

Migas. If you're not from Texas, you may not be familiar. But you will want to be! They're totally amazing! Perfect for breakfast or brunch. So delicious! TablerPartyofTwo.comIf you aren’t from Texas, chances are you’re not familiar with migas. And migas is something you definitely SHOULD know about. Simply put, migas (pronouned MEE-guz) is THE most flavorful and delicious breakfast. In fact, I don’t think I’ve introduced anyone who didn’t enthusiastically rave about them! So migas it was for brunch when Tom’s cousin and his wife visited us yesterday. While I cooked, Tom set and decorated the table with the stenciled burlap table runner I created a few weeks ago. I think he did a great job!

Okay… let’s make some migas!

Migas. The best brunch ever!

Ingredients 

-8 eggs
-1/4 cup of milk
-1 cup of green bell pepper
-1 cup of red bell pepper
-1 jalapeno pepper
-1 cup of onion
-1 cup of tomatoes
-1 cup of tortilla chips
-3/4 cup grated monterrey jack & cheddar cheese blend
-1 tablespoon of olive oil
-3 tablespoons of cilantro

Instructions

Coursely chop all the veggies.

Whisk the eggs together in a small bowl and add milk. Salt the eggs and set them aside.

Next, sautee all your peppers and onions for about 4 minutes over medium heat in a skillet. Then add the tomatoes and sautee for about 30 more seconds to warm them up.

I might add, at this point, the kitchen smells amazing. Seriously. Anyway, back to the recipe. Now it’s time to turn the heat down a bit and add the eggs.

Gently fold the eggs until they are somewhat firm. This is when you’ll add the chips, cheese and cilantro.

Yesterday, I used Tositos, small round chips. I crumbled them just a bit right before adding them. You definitely don’t want tiny pieces. About 1/2 or 1/3 of the size of the chip is what I aimed for. Side note: The bowl on the bottom left of the picture above is a batch of my 3 Minute Salsa I whipped up. Don’t add that to the eggs. It’s to spoon on top of the migas when they are served.

Continue to gently fold the eggs until they are done.

And this is what your finished product looks like. A dish full of yumminess!

We served ours with some black beans and mimosas. Don’t forget to spoon a little salsa on top!
