Crazy Good Cilantro Grilled Chicken

Tom and I love chicken. But not bland chicken. So I’m always on the lookout for a quick, flavorful marinade that delivers left-over worthy chicken. This is one of my faves: Crazy Good Cilantro Grilled Chicken.

Super easy, super delish, 3 ingredient Cilantro Chicken!

And what could go better with this great recipe than asparagus risotto and artichokes? Nom nom nom! I boil the artichokes and spend like 5 minutes on the risotto while Tom grills the chicken. I love cooking meals that have a division of labor! Here’s how to make this quick weekday meal. All the ingredients can be purchased in a 5-minute trip to Trader Joe’s.

Ingredients for Crazy Good Cilantro Grilled Chicken, Risotto & Artichokes

-boneless, skinless chicken tenders, breasts or thighs
-Trader Joe’s Cilantro Salad Dressing
-Trader Joe’s Asparagus Risotto
-1 artichoke per person

Instructions

Wash artichokes and then snip off the thorny part of leaves with kitchen scissors. Cut the excess stem and pull off small leaves at base of stem. Boil the artichokes for about 45 minutes in water with a slice of lemon.

Rinse chicken and pat dry. I usually marinate chicken for at least 30 minutes (it’s certainly better that way). Sometimes I don’t have time for that, and we just brush the dressing on the chicken once it’s on the grill (like I did on this occasion). I like chicken tenders on weeknights because they grill so quickly.

Grill the chicken tenders for 6-8 minutes per side. This picture shows my husband’s method, not mine. He didn’t brush the marinade on the other side of the chicken because he didn’t want to get the grill messy. I would opt for the messy grill and tastier chicken!

Meanwhile, I make the easiest part of this dinner… the Asparagus Risotto! Honestly, friends, it’s good enough to serve to dinner guest. And I have.

Just spray some cooking spray in your skillet and stir occasionally for 5-6 minutes. What could be easier?

Here’s the finished meal. Can I say, I must have been distracted or sleepy when I took this picture. It’s not pretty. It’s looks messy. Thankfully it tasted amazing… I promise!
